The fastest way to add serious protein to a plate that doesn't have enough. Paneer cubes seared hard in a little oil, then tossed with sliced garlic and chilli flakes for the last minute. Eat them beside eggs, over a bowl, or straight from the pan — no judgement.

Ingredients (2 servings)
- 170 gPaneer
Swap: Use firm tofu: press it well first and expect a lighter result.
- 2 cloveGarlic — thinly sliced
- 1 tspVegetable oil
- ½ tspChilli flakes (optional)
- to tasteSalt — to taste
Method
Cut the paneer into 2 cm cubes and pat them dry — dry paneer sears, wet paneer steams.
Heat the oil in a nonstick pan on medium-high and sear the cubes 1–2 minutes per side until golden.
Drop the heat, add the garlic and chilli flakes, and toss for one minute — the garlic should turn pale gold, not brown.
Season with salt and serve hot.
Storage
Best straight from the pan. Refrigerate up to 2 days and re-crisp in a hot dry pan — the microwave turns them rubbery.
