Cinnamon Apple Compote

Soft-stewed apple with cinnamon and lemon — all the sweetness comes from the fruit. No added sugar.

Ten minutes on a low flame turns two apples into a warm, spoonable topping that makes waffles, pancakes and skyr bowls taste like dessert without adding any sugar. Cinnamon and a squeeze of lemon are the only seasoning it needs.

Ingredients (4 servings)

  • 300 gApple — about 2 medium, diced
  • ½ tspCeylon cinnamon

    Swap: Cassia cinnamon is acceptable. Use a little less, because it has a stronger flavour.

  • 1 tspLemon juice
  • 45 mlWater

Method

  1. Peel (or don't) and dice the apples into 1 cm pieces.

  2. Simmer with 3 tablespoons of water, the cinnamon and lemon juice on low heat, covered, for 8–10 minutes.

  3. Mash a few pieces against the pan for body, leave the rest chunky.

  4. Serve warm or cold.

Storage

Refrigerate in a jar for up to 5 days, or freeze portions for a month. Reheat gently or use cold from the fridge.
