Roasted Chickpea Topping

Cooked chana roasted crisp with cumin and chilli — cheap, crunchy, and carries fibre plus a little protein.

Leftover boiled chana becomes a crunchy topping that works on bowls, salads and even eggs. A single teaspoon of oil and a hot pan (or air fryer) does it. They stay crisp for days in a jar, which makes this the most meal-prep-friendly item on this list.

Ingredients (4 servings)

  • 200 gCooked chickpeas (chana) — boiled or canned — rinsed, drained and dried thoroughly
  • 1 tspVegetable oil
  • ½ tspCumin powder
  • ¼ tspRed chilli powder (optional)
  • to tasteSalt — to taste

Method

  1. Pat the cooked chana as dry as you can — moisture is the enemy of crunch.

  2. Toss with the oil, cumin powder, chilli powder and salt.

  3. Roast in a single layer: 18–20 minutes in a 200°C oven or air fryer, shaking halfway, until deeply golden and rattling-dry.

  4. Cool fully before storing — they crisp further as they cool.

Storage

Airtight jar at room temperature for up to 4 days. If they soften, 5 minutes back in a hot oven restores the crunch.
