  • 200 gPaneer

    Swap: Use firm tofu for a lighter bowl: press it well and expect less richness. Low-fat paneer also works, with noticeably less fat and fewer calories.

  • 1 pieceCapsicum — any colour, chopped
  • 1 pieceOnion — chopped
  • 60 gGreen peas — fresh or frozen
  • 1 pieceGreen chilli — slit
  • ½ tspCumin seeds
  • ¼ tspTurmeric powder
  • ½ tspChaat masala
  • 2 tbspCoriander leaves — chopped
  • 2 tspVegetable oil
  • to tasteSalt — to taste

Method

  1. Cut the paneer into 2 cm cubes. Chop the capsicum and onion into similar-sized pieces.

  2. Heat half the oil in a wide pan on medium-high. Sear the paneer cubes 1–2 minutes per side until light golden, then remove.

  3. Add the remaining oil to the pan. Crackle the cumin seeds, then add the onion and cook 2 minutes.

  4. Add the capsicum and peas; stir-fry 3–4 minutes until just tender but still bright.

  5. Add the turmeric, green chilli and salt; stir for 30 seconds.

  6. Return the paneer, toss gently to coat, and cook 1 minute to warm through.

  7. Finish with chaat masala and coriander. Serve hot.
