Expect distinct layers rather than one blended topping. The toast should stay crisp, the loaded guacamole should be cool, creamy and crunchy, and the mashed eggs should create a soft second layer before the oregano finishes everything with a fresh herby aroma.

Cook's notes

This is an assembly recipe: the guacamole, the eggs and the toast can each be prepared independently and in any order — only the final layering is fixed.

Why mash the eggs instead of slicing them?

Mashing the eggs creates an even second layer that stays in place over the guacamole. Sliced eggs leave gaps, while a mashed layer gives a more consistent bite across the whole toast.

Why remove the tomato seeds?

Removing the seeds keeps the guacamole fresh and crunchy instead of watery. The tomato still brings freshness without thinning the avocado mixture.

Why sprinkle oregano at the end?

Sprinkling oregano over the finished toast keeps its fresh herby aroma noticeable in every bite. Mixing it into the guacamole makes that flavour much less pronounced.

Loaded guacamole

  • 1 ×Ripe avocado
  • 1 ×Onion — finely chopped
  • 1 ×Tomato — deseeded and finely chopped
  • 1 ×Cucumber — finely chopped
  • 1 ×Green chilli — finely chopped (optional)
  • 2 tspLime juice

Toast

  • 2 slicesSourdough bread
  • 2 tspButter — for toasting
  • 2 ×Egg — boiled

Finish

  • ½ tspDried oregano — to finish
  • 1 tspExtra virgin olive oil — a drizzle just before serving (optional)

Method

  1. Boil the eggs until fully set, then peel them. The eggs, toast and guacamole are independent — while the eggs cook is a good time for the rest.

  2. Toast the sourdough in butter on a hot pan until the surface is crisp.

  3. Mash the avocado with a fork. If you prefer a smoother base, blend it briefly instead.

  4. Make the loaded guacamole: combine the avocado with the onion, deseeded tomato, cucumber, green chilli, lime juice, salt, pepper, chilli flakes and olive oil. Taste and adjust the seasoning.

  5. Mash the boiled eggs separately. Do not mix them into the guacamole — they are their own layer.

  6. Assemble in this order, always: buttered sourdough first, loaded guacamole next, mashed eggs on top.

  7. Sprinkle dried oregano over the finished toast — over the top, not into the guacamole. Add the optional drizzle of extra virgin olive oil just before serving.

Why this recipe works

Each layer earns its place. Cucumber does the most surprising work — it makes the guacamole refreshing, cooling and lighter, so the toast never feels heavy. Onion brings crunch and softens the avocado's stronger notes, and butter is the toasting fat because it simply tastes best.

Storage and reheating

Not yet tested for keeping: in our kitchen this toast has only ever been assembled and eaten straight away, so we will not guess at storage guidance. Make the components fresh and layer just before eating.
