    Swap: Use thick hung curd (chakka): drain full-fat dahi in muslin for 4–6 hours. Protein is roughly half that of skyr, so the nutrition figures shift accordingly.

Method

  1. Boil the egg to your liking (8–9 minutes for fully set, 6–7 for a jammy centre as pictured), cool in water, peel and halve or slice. A pre-boiled egg from the fridge works and makes this a 5-minute recipe.

  2. Stir the skyr with salt, black pepper and half the chaat masala until smooth.

  3. Toast the bread until golden and firm.

  4. Spread the seasoned skyr thickly over both slices.

  5. Arrange the egg slices on top, then scatter over the onion, tomato, green chilli and coriander.

  6. Finish with the remaining chaat masala and eat immediately, before the toast softens.
