Ingredients (1 servings)
- 2 ×Egg
- ¼ ×Onion — finely chopped
- ½ ×Tomato — finely chopped
- 1 ×Green chilli — finely chopped
- 1 tbspCoriander leaves — chopped
- 1 tspVegetable oil
- to tasteSalt — to taste
- 2 pinchesBlack pepper
Method
Whisk the eggs with the salt and a pinch of black pepper until slightly frothy.
Stir in the onion, tomato, green chilli and coriander.
Heat the oil in a small nonstick pan over medium heat.
Pour in the egg mixture, tilt to spread, and cook 2–3 minutes until the base is set and golden.
Fold in half and cook 30 seconds more for a just-set centre.
